Crock Pot Dulce De Leche

  • Combine sugar and milk in a wide-mouth pint jar. Blend in the 1/2 C boiling water using an immersion blender.
  • Place the jar in a crock pot on top of a trivet. Add boiling water to cover the level of the milk. It doesn't need to necessarily cover the jar. Cook on high 3-4 hours. Check after about 2 1/2 hours. You can open the jar and stir at this point.
  • It's done when it's a nice caramel color. It will be runnier at this point because it's hot. Place it in the fridge after stirring. The jar will seal because of the heat but can't be considered shelf-stable.
  • Because there is no fat in this recipe, the sugar will start to crystallize after about a week. If this bothers you, reheat it, stirring it until smooth.
