Easy Crock Pot Taco Soup

  • Brown beef and onion in a skillet. Drain.
  • Dissolve taco seasoning in the water. Combine all ingredients except cheese and chips in the slow cooker.
  • Cover and cook on low for 4-6 hours.
  • Ladle into bowls and top with cheese. Serve with chips.

  1. Easy recipe to throw together. Our family enjoyed it. I think when I make it next time, I am going to spice it up more. I felt like it was lacking in flavor, but I'm really big on flavor, so it could just be a personal preference!

  3. So good!! I love this super easy meal. My 3 year old even was able to help me put it all together. My husband, his buddy and I ate almost the entire pot of soup! I did drain out most of the juices from the vegetables and added a can of chicken broth. Amazingly good!
     
  4. wow husband drives a truck never knows when he is coming in sooo i fixed this last night around 11:00 and when he got here at 2:00 he ate 2 bowls loved it! substituted black beans and the tomato was the spicy hispanic type. thanx will definitely fix again.

Next time I will make with the tomato sauce so it is a little more tomatoey and put in my large crock pot, but was good just the way it was anyway. Thanks for a great recipe.

  1. This was very good. I used black beans in place of kidney beans and left out the tomato sauce as I was using 1 1/2 qt crock pot, so wasn't room. Next time I will make with the tomato sauce so it is a little more tomatoey and put in my large crock pot, but was good just the way it was anyway. Thanks for a great recipe.
     
  2. This soup was a hit at our house. I did substitute shredded chicken breasts for the beef and also used Rotel tomatoes instead of the diced tomatoes. I think in the future I will use regular tomatoes because my youngest thought the soup was a little too spicy for him. I topped the soup with crushed tortilla chips and some shredded old cheddar cheese. Thanks for posting such an easy and tasty recipe.
     
  3. Very good for a simple and easy soup. I love that it uses taco seasoning instead of peppers. I used red beans since I do not like kidney beans and extra tomato sauce instead of the diced tomatoes. Was a perfect lunch on a rainy day!
     
  4. This is a very tasty soup that couldn't be any easier to make. I browned my ground beef the night before so it was ready to just put into the crock pot the next morning. I substituted beef broth for the water and it turned out great!
     
  5. So good and easy to make! I had ground chuck and stewed tomatoes so I used those. Also used vegetable broth instead of water for a bit of a richer flavor and added a couple cloves of garlic to the onion and ground chuck mixture. Thank you megnbrycesmom for posting this recipe!
