Cucumber Dressing

ingredients
- 1 cup chopped seeded, peeled cucumber
- 1⁄2 cup plain nonfat yogurt
- 1⁄2 teaspoon lime zest
- 2 tablespoons chopped fresh chives or 2 teaspoons dried chives
- 2 tablespoons lime juice
- 1 tablespoon low-fat sour cream
- 1⁄4 teaspoon pepper
directions
- Put all ingredients in a bowl and mix together with a fork or wire whisk.
- Chill before serving.

I made this earlier today for my salad with dinner and boy was it tasty! I mean, yeah, you can tell it's light, but that way, it doesn't take too much attention away from the veggies. Out of sheer desperation to make the recipe, I only had 1/2 the amount of lime peel dried (limes annoy me because they have so very little peel..haha!) so, I used some of the orange peel that I grated yesterday. Instead of just using one, I used both, and it gave it a nice citrus flavor. Next time, I'm going to try some lemon peel thrown in with them. I couldn't taste my chives real well, so I'll leave those out or double them...haven't decided if they're necessary. All in all, I thank you for a great recipe!
