SALAD
- 1 large cucumber, peeled and julienned
- 1⁄4 cup sweet onion, julienned
- 1 cup mixed baby greens
- 3 tablespoons champagne vinegar
- 2 tablespoons olive oil
- salt and pepper

DRESSING
- 1⁄2 cup red wine vinegar
- 3⁄4 cup olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 2 tablespoons brown sugar
- 1 teaspoon dry tarragon
- salt and pepper
directions
- Combine all salad ingredients in bowl and chill 30-45 minutes prior to serving.
- Whisk together all dressing ingredients and chill until ready to serve.

Note that I only made the dressing portion of this recipe. :) My husband and I both enjoyed this a lot. We used a "sprig" of fresh tarragon, rather the dried, and were very happy. I liked the sweetness of the brown sugar and honey, paired with the dijon and, of course, tarragon is always interesting. I might cut back on the vinegar, or use something a little more subtle next time, but overall, this is a very nice dressing to keep on hand for summer salads. Thanks!

This is very good. The tarragon is very subtle and nice. We minced it so that it was very, very fine. We also didn't have any champagne vinegar, so we used rice wine vinegar instead. It was fine. We used an entire bag of salad (baby greens) and still had way too much dressing. You may want to cut the dressing quantity back by 1/2.
