Cucumber Stir Fry

  • Place a wok or heavy pan over high heat.
  • When wok is hot, add 1 tablespoon of the oil.
  • When oil is hot, add cucumbers and 1 tablespoon of the ginger and a couple of splashes of soy sauce.
  • Stirfry until cucumbers are tender-crisp to the bite (about 3 minutes).
  • Pour onto a platter and keep warm.
  • Pour remaining 2 tablespoons oil into wok.
  • When oil is hot, add garlic, remaining 1 tablespoon ginger, onions, and shrimp/chicken/pork; Stirfry until all are cooked through (about 3 minutes).
  • Add a couple of slashes of soy sauce during the last minute of cooking.
  • Serve over hot rice.

  1. I love cucumbers and am thrilled to have a new recipe to use them -- it will come in handy when the garden yields come in. My only change was to add one minced red chili, and therefore reduced the pepper flakes to just a sprinkle.
     
  2. Incredible. I used peanut oil instead of canola, added 1/2 a cup of peanuts, and instead of red pepper flakes, used 2 tsp of thai fire sauce. Wonderful. Never thought of using cukes in stir fry, but now I will. Oh, ,I used equal parts chicken and pork too. yummy. This would almost be good if you cooked the meat, then just added it to the remaining ingredients and chilled like a salad.
     
  3. A very nice recipe to use when you are over-run with cucumbers (like I was this summer!). The cucumbers remind me of water chestnuts.
     
  4. I made this for my family some time ago except I didn't peel the cucumbers. It still came out alright and they loved it. This is nice and quick to make. Now that I'm a pescetarian living with a vegetarian roommate, I'm going to attempt to make this with tofu.
     
  5. I used peanut oil, 2 cucumbers (seeded), 1 lb of shrimp (should have removed shells before cooking), 1/2 tsp dried ginger, 5 green onion stalks and forgot the red pepper. It was still great. Since I am not a great cook, I appreciate recipes that can tolerate forgotten ingredients and miscues.

Zaar...Wow, what a place! I'm one of the old timers of Zaar. I can't count the number of wonderful dishes I cooked in the past few years since joining. Along the way I have had the pleasure of meeting several Zaar chefs. Talk about your fruits and nuts! lol. I have enjoyed meeting them all. Family: What's to say...I have had the same sweet husband forever (Good thing....I'd hate to have to break a new one in...=) and live close to a couple of grown children. (Maybe you've met Smoke Alarm Jr. ..her brown rolls are sooo good!) Therefore, my family gets together often to enjoy each other's company and cooking. My greatest joy is six "little to tallerthanme" kids running around calling me Grammy. They wear me out! lol For the past thirty years I have been a Special Education teacher for grades 9-12 and love it. Took some time off last year to recovery from surgery, chemotherapy and radiation for breast cancer. (Loved the radiation....I keep imagining that we are absolutely napalming the nasty cancer cells tohellandback to keep the little suckers from returning. =) My prognosis is good and now "I'm back in the saddle again". lol. Being a north country "gurl", I am happiest outside...walking, fishing, sitting in front of an outdoor fire or being on water (although in February it's a bit stiff....=0) When indoors I like to read, garden, knit, quilt and paint. During cold Maine weather I like to warm my feet on a very large ( 100 pounds of long legs and huge feet), sweet and furry golden retriever named Kerry (aka KTBRD: Kerry the big red dawg..lol) . In the summer, the dawg and I round up the grandkids, hit the local dairy bar for a Mounds Sundae that is to die for!!!=0) . Then spend a lot of long and lazy summer days at camp . All in all...Boy, Life is good! =)
