  • Boil penne noodles al dente.
  • Saute diced carrots in butter;.
  • add onion
  • cook until just soft
  • add zucchini; add peas.
  • cook until just done
  • Add salt, pepper, and curry powder.
  • Add cream; add noodles.
  • cook a coupla minutes
  • stirring and shaking.

  1. The curry really makes these well flavored. I did use gluten free penne and that may have been why I had very little sauce on the noodles. Overall a nice meal. Made for ZWT9.
     
  2. I liked the combination of penne and curry. It was pretty bland, as I guess befits Danish curry. I liked that it was flavorful without being hot. We had to add more salt, and DH added some chili. I also wish the veggie pasta ratio had been higher on the veggie side. I substituted evaporated milk for cream. This is the first time in a long time that I have used butter to saute with. It kept the veggies nice and moist.
