Date Loaf

"This recipe is from the Edmonds Cook Book. My kids love this, especially as an after school snack with a glass of milk. It has a lovely rich caramel flavour. I make mine without the walnuts and it's still great. Prep time includes 1 hour for soaking dates in boiling water."

  • Put dates, boiling water, butter and baking soda into a bowl and stir until butter is melted.
  • Set aside for one hour.
  • Beat sugar, egg, vanilla essence and walnuts (if using) into date mixture.
  • Sift in flour and baking powder and stir until just combined.
  • Pour mixture into a greased 22cm loaf tin and bake in a 180C oven for 45 minutes or until inserted skewer comes out clean.
  • Leave in tin for about 10 minutes before turning out onto cooling rack.

  1. Made this today with half the sugar (used turbinado as we were out of brown), egg whites and a little extra butter and turned out great. Also added 1/4 teaspoon each of cinnamon, nutmeg and ginger. So good with cream cheese!

  3. Wonderful recipe!! Made it several times already and each time it turns just perfect. Very easy and super tasty. Personally walnuts are a must.!!!
     
  4. Very dissapointed with texture ,taste it was just to be thrown in the bin. Not sure how all those 5 stars appeared .It is very annoying however quick the recipe may be to have to bin it. Best to not put it u at all.
     
  5. Okay for a low-fat treat, but next time I will make it with much more butter. Also, it seemed to cook to fast on the outside - it was burned around the edges. Any suggestions? I do a lot of baking on a regular basis, and have not had this problem thus far.

  1. I put half as much sugar in because i didn't want it too sweet
     
  2. Lovely and sticky. I made a double quantity and baked in a roasting tin. I used pecans instead of walnuts but I only had a small packet, which was a shame. More would have been nice. Update: I forgot to say that I also ran out of plain flour so this was made with half wholewheat flour. We've just had some of this loaf heated in the microwave for 30 secs with warm custard. Delicious!
     
  3. Angela, I enjoyed your date loaf. I used 1 T oil instead of butter and omitted the nuts. Next time I think I'll go with 2-3 T oil to make it just a tad more tender (but still on the low fat end of the equation), and perhaps add an additional 1/2 c chopped dates. It's a nice mild flavor.
