"These delicious corn muffins were served at Kenny Roger's restaurant. I found the recipe on "Top Secret Recipes". I love to serve them with BBQ. They are so good it is almost like eating a dessert."

  • Preheat oven to 400 degrees.
  • Mix butter, sugar, honey, eggs, and salt into a large bowl.
  • Add flour, cornmeal, and baking powder and blend thoroughly.
  • Add milk while mixing.
  • Add corn to mixture and work into mixture.
  • Do not mash corn, the whole kernel is baked into the muffin.
  • Fill a muffin pan with 12 paper/foil muffin cups and fill 2/3 full with batter.
  • Bake for 20-25 minutes until muffins are light brown.

  1. This is a wonderful corn muffin recipe. Nice and tender inside and slightly crusty on the outside. I agree with Marie, you can taste the honey flavor which I think is a real plus. These went great with our BBQ and I will be making them alot to go with my favorite soups and stews. Thanks Dawn.
     
  2. Very good tasting corn muffins. Nice texture. You can detect the mild honey flavor in them. As with any other baked good, be careful not to overbake them. I recommend these muffins.
     
  3. This is probably the best corn bread recipe I've found! they turned out super tasty! i sprinkled some chili powder in the dough, and it didn't add any heat to it, but it definitely enhances the flavors. SO GOOD!
     
  4. Didn't want to deal with muffins, so put in a 8x8 for 22 minutes. Had to put back in for another 5-10 minutes. I didn't time it, just took them out when they started to smell good. They almost looked burned, but they weren't, that crust was nummy and sweet. It probably wouldn't have happened if I had done muffins, but didn't stop us from eating it...I think this may be the best corn muffin recipe I've ever had. My kids wolfed this down...
     
  5. These muffins are Wonderful, followed all the instructions of the recipe had no problems so easy to make, and tasted FANTASTIC. These would go great with soup or chili like Ellie2 says.

  1. These were really good, they have a great sweet taste, next time I may try making it without the corn, or maybe even substituting the frozen corn for 1/4 of creamed corn.
     
  2. I finally found a perfect corn muffin recipe! These were delicious, even my husband who doesn't like corn muffins at all loved them! The only change I made was to substitute syrup for the honey because I was out of honey. I was so glad I made a double batch!!
     
  3. i used buttermilk and substituted frozen blueberries for the frozen corn- they turned out great!
     
  4. Yum! I used canned corn also and margarine and soy milk instead of butter and regular milk. It yielded me 11 large muffins. Thanks!

I?m ?originally from Texas, but now live in Florida. Still gotta have that spice though....love chipotle peppers, habaneros, and jalapenos. This is a picture of myself & my 2 daughters taken in Dec'06. I am working on my graduate degree, & still work as a nurse prn. When I'm not cooking and eating what I cook... I head for the gym to work out. As far as cookbooks, I love the church/ community cookbooks, where someone has dug out old handwritten recipes by granny and shared them with others-those are the best kind. If I had a month off, I'd for sure go hiking, would love to visit Australia and New Zealand.?
