  1. Excellent recipe - thanks so much. For those trying to reduce calories, feel free to use whatever chocolate syrup you like. The difference between lite and regular chocolate syrup is only 50 calories for 2 TBS so over 12-14 servings, that's only 3-4 calories per serving. Choose based on taste. The changes to the dairy ingredients mentioned by mommy02 are the most impactful. The product tastes great with those changes. If you feel that it is a bit thin or watery, add few tablespoons of corn syrup and it will improve the body greatly.
     
  2. Very Very good... Made 5 batches and decorated mason jars to take to a St. Pats party, with a bunch of beer drinkers (I didn't know - arg!!) Once they tried it, they loved it. I did a couple of small things to try to reduce calories - I mixed the whipping cream with half and half (saving a huge amount of calories). I used fat free sweetened condensed mild and light chocolate syrup. STILL WONDERFUL!! Thanks so much!
     
  3. Fantastic recipe and so quick! I didn't have the almond extract but it is still delish! I had some home made Bailey's my mother made, that has eggs in it, and I just tasted these side by side, and this wins by far! I found it to far lighter and more authentic; the eggs made it a little heavy! I also used light Chocolate syrup and you would never know, though I'll feel better with less calories! Thank you - this will be on my xmas gift list this year!
     
  4. Thanks Kitten, this is so nice, I may never buy Baileys again. I also used my own homemade vanilla. It tastes wonderful, I had some this morning with my coffee. It was sweet, thick and creamy. What a treat and its so quick and easy to make. It will be wonderful in Bailey cakes for Christmas. A recipe that I will make again and again. Thanks for sharing.
     
  5. Oh, yum! I think this is a little more chocolatey than Bailey's, but believe me, that is *not* a bad thing! This is a delicious Irish Cream. I have a very similar recipe that I adore, but I like this one just as well, if not more. I made this as written except that I realized at the last minute that my instant coffee was old and yucky, so I used instant espresso instead, cutting back a little on the amount. And I used my homemade vanilla extract. I made this yesterday and let it mellow overnight, and I'm enjoying some in my coffee right now. This will become a regular treat at my house.
