Delicious Lemon Roast Potatoes

"Originally from Canadian Living Magazine, these are delicious and easy. They are lemony without being sour, and not too oily. Great with Greek food, or anything really. These take a lot less time to make than similar recipes on this site."

directions

  • Boil potatoes for approximately 15 minutes in a large pot of salted water.
  • Drain and let cool somewhat.
  • Peel potatoes if desired and cut into wedges.
  • Whisk together all other ingredients in a large bowl. Toss with potatoes to coat.
  • Arrange potatoes in a greased baking pan or dish.
  • Roast at 400 degrees, turning once, for about 40 minutes.

  1. Wow, can you say wow? These potatoes are wonderful. I simply adore greek lemon potatoes and these subtle lemon potatoes certainly remind me of them, without all the work. These potatoe wedges were crisp and crunchy on the outside, tender and perfectly cooked, they were flavorful. Made exactly as written.   2. I made this with wonderful organic potatoes. The natural goodness of the potatoes was peaked with fresh squeezed lemon juice. The other seasonings were ideal in both amount used and type. I had enough of the marinade left to use it to use it for letting the pork loin cut soak in it for the first 20 mins of spud baking and then I put it on the baking sheet with the potatoes. In another 20 mins everything was perfect and full of wonderful flavor.

  5. Oh WOW. If I could give these ten stars, I would. They are absolutely divine! I used purple and red skin potatoes, and cooked longer in the oven than was suggested, to crisp them up a bit. I will make these over and over again! Thank you for posting this! Made for PAC Fall 2009 - you were adopted!
