  • Pat dill pickle dry with paper towel.
  • Take 2-3 pieces of meat (depending on size of pickle), and place them on a cutting board overlapping half of each with the next. (If you're lucky, you can find the ham cut in a rectangular shape as opposed to square. In this case, you can use just one slice and it will encase the entire pickle.).
  • Spread cream cheese over meat.
  • (You can use more cream cheese if you like.) Wrap pickle around in blanket fashion.
  • Chill for an hour or two, then slice pickle in~1/2 inch pieces and lay flat on tray.
  • (If using dried beef, you can also put meat in blender and pulverize. Spread cream cheese on dried pickle then roll in pulverized beef. Again, allow to refrigerate 1-2 hours and slice as above.).

  1. As much as we love pickles and am glad to find this little recipe hack. Jr likes crm cheese and pickles. No brainer, right? Well I've done salami rolls in the past and they were good. The last time I made them I used pre packaged and sliced salami and they were not great. They are always the best using deli sliced meat. The image looks like a Buddig type is used in your recipe. I am making the treats for a new (2022) Hercules Poirot movie - I'm excited about it. Hope it comes to the drive in, I love taking snacks to the show.

  1. We LOVE these little babies! This has been my husband's favorite appy for years. Every Superbowl, every New Year's Eve, and many other occasions, these are always on our menu. I use soft cream cheese, and it helps to dry the ham off with paper towels for easier spreading. Then I always use the refrigerated Claussen dill pickles. OH YUMMY! I think I better make them soon!
     
  2. I turned this into a dip we serve with firm crackers like wheat thins. Chop 1/2 lb dried beef, from deli only, add 8oz sofftened cream cheese and 3/4 cup or so of sour cream. Stir in chopped baby dill pickles. I keep adding the pickles until I get the amount my family likes which is lots. Tasty and easier than doing the rollups!

Tweaks

  1. Okay. I make these and always get looks, but then after one bite they are under my spell!! I USE TONS OF CREAM CHEESE!! The more the better!! I can usually use a block and a half of cream cheese and a whole jar of the refridgerator pickles (Vlasic Hearty Garlic whole Kosher Dills) I also use dried beef, but I do not shred it - I just wrap it around the pickle. I put the cream cheese on the pickle instead of on the meat. Seems to work for me! Enjoy! You will not regret it...anyways, this is what I always say...a recipe with cream cheese...well, that is just a good recipe!!! ;)
