Dilled White Bean and Grape Tomato Salad
"From the June, 2010 issue of Bon Appetite. This is a refreshing summer salad in which the dill and balsamic vinegar truly give a lift. It is best prepared a day in advance, and will keep well in the refrigerator for a few days."

ingredients
- 2 (15 ounce) cans cannellini beans, rinsed and drained
- 2 1⁄2 cups grape tomatoes, halved
- 2⁄3 cup red onion, diced
- 1⁄4 cup fresh dill, chopped
- 1⁄4 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 1 tablespoon balsamic vinegar
- 2 garlic cloves, minced
- salt
- pepper
directions
- Toss all ingredients in a large bowl.
- Season with salt and pepper.
- Let marinate at room temperature for 1 hour.
- Cover and chill.
- Return to room temperature before serving.
- Cooking time is marinating time.

Incredible bean salad, and I couldn't get enough of it. Made a big batch and kept it in the fridge all week. Perfect lunch or side! -
Easy and delicious. The recipe was reduced by half and yielded 4 wonderful side servings. I had a ripe locally grown tomato that was small diced and used in place of the cherry. White beans that had been cooked and frozen was used in place of the canned. The salad was made a few hours before serving and refrigerated. As suggested in the recipe it was allowed to sit out for awhile to take the chill off. It went very well with Recipe #137575 and Recipe #16533. Made for Aussie Swap. -
Wow, this is a great side dish that complements so many different meals. I actually prepared this for a picnic at the beach, to be eaten with a pepperoni/sausage bread. It was great that I didn't really have to worry about spoilage. It traveled well, and the flavors developed nicely. It was so easy to put together, too. I made this exactly as posted, except I thought I had more grape tomatoes than I did, and had to use some cherry tomatoes in their place. I will definitely be making this again! Thanks for sharing. This recipe has it all: delicious, goes together quickly, commonly available ingredients, make ahead, and it is different from other bean salads. I used basil as the herb instead of dill and it became distinctly mediterranean. Tres chique! -
I made this recipe to go along side grilled steaks. I recently moved back home and the same week one of the foster kids my parents cared for moved in as well. I chose this recipe because everything but the fresh dill was already on hand. I wasn't sure however; how well it would be received. There was just a small amount left over which I enjoyed atop whole wheat crackers the next day for a snack. I did add more fresh dill, an additional small clove of garlic and a pinch more lemon juice though. It is a recipe I will be making again in the future. Thanks for posting your recipe NurseJaney. WOW! Janey! Delicious and so easy to make! I added more dill since I'm a dill fanatic! I used fresh Jersey Italian tomatoes instead of the cherry tomatoes from CA. Nothing beats a fresh tomato from the garden. Made for the "Think Pink Tag Event - October 2010."

<p>This photo of DH and me was taken on our 50th anniversary, 12/27/08. Both DDs and 2 DGC celebrated with us. <br /><br />DH and I live about 40 miles north of Baltimore, in what WAS rural 40 years ago. We are empty-nesters. Have 2 adult daughters, 2 great SIL, and 3 grandchildren --1 is 22, and 16 year old twins. In September of 2011, we were presented with our first GREAT-grandson ! They all live in PA. and are VERY busy people ! <br /><br />I retired from MANY facets of nursing 12 years ago, and LOVE being in charge of myself ! <br /><br />We had a 4-couple Gourmet Group for so many years, that we ran out of new things and themes. Now we meet at restaurants, to avoid trashing the kitchen as well as the budget. We started with 7 course meals! None of us can DO that anymore !! <br />We have been VERY fortunate to be able to travel more than we ever dreamed !! Have B&B'd in Great Britain many times; visited Italy, Greece, France, Australia, New Zealand, Germany, Switzerland, and Iceland (in February !) We would far rather stay in B&B, or self-catering apartment or dwelling, than be on a tour. Our trip in '09, was to 2 small towns in Sicily --Sant'Alfio, on the slope of Mount Etna, in a 15th century, converted winery --and a week on the north coast near Cefalu. Very few spoke English, but everyone was helpful and we managed to communicate, and had a wonderful time ! (Photos in Gallery on website below !) We returned there in Sept. '11, for a 2 week vinyard tour with a small group, led by our local wine store owner - whose family is still in Sicily ! <br /><br />DH is my photographer - (and a website designer) but he insists on set-up time as well as a hot meal ! I should plan ahead for serving appeal, so he can get the best shot. <br /><br />I am now a SIX year survivor of colon cancer, as of 5/11, and four year of thyroid. Angels on my shoulder found both lesions before I even had symptoms !
