  • In a pot of boiling salted water, cook potatoes until tender.
  • Drain and place in a large bowl.
  • Mash with potato masher.
  • Add onions, garlic, butter, milk, egg yolks, pepper, and nutmeg.
  • Beat with electic mixer until light and fluffy.
  • Add in parsley, sausage and cheeses.
  • Spoon into a greased 2 quart casserole dish.
  • Sprinkle with thyme.
  • Bake, uncovered, at 400 degrees for 30 minutes or until just browned and heated thoroughly.

  1. This was simple and filling. My husband thought it needed more spices (may be better with a spicier sausage than I used). I served it with biscuits and country gravy as "breakfast for supper."
     
  2. I made this for dinner one night lastweek. My mom said she didn't care for one of the spices in it. But everyone else loved it so much! So for that, I'm giving it a 5 star rating! Thanx for a great recipe!

  4. wow talk about comfort food!!! This was sooo bad!!!! for my diet, but ohhhh soooo good!!! DH really loved it, as did I, I have to tell you I couldn't resist, I added more cheese to melt on top and used fresh parsley from the garden. Also used left over cooked hot Italian sausage, what a delicious treat!! Thank-you!!
