Dry Jell-O Salad (Jello) Cottage Cheese Fruit Salad

"I could eat the whole bowl by myself! This is a great recipe for those who don't like Jell-O since you use it dry and it gives a totally different texture than traditional Jell-O salads. Hint: if you use orange flavored Jell-O use mandarin oranges instead of pineapple."

  1. This is a recipe I used to make while attending a diet group. I used lowfat cottage cheese, diet Jello and Lite Cool Whip. I would recommend mixing the diet jello with the cool whip first to get it all dissolved before adding other ingredients. Very filling and curbs a sweet tooth too.
     
  2. My kids don't like the 'lumps' in cottage cheese. I've been making this dessert as a high-protein sweet-treat for years, but my version takes a little longer. I do dissolve the jello in the recommended amount of hot water but I don't add any cold water. I puree the cottage cheese in my food processor until it's smooth. I use low-fat cottage cheese, sugar-free jello and I add a little bit of splenda to sweeten-up the cottage cheese. I even get by without adding the whipped topping if I'm out - it's a little bit 'denser' - slightly more jello-y - it is fun to pour this into graham cracker crusts as a 'creamed pie', too, if you want to dress it up. Lots of ways to combine this, lots of flavours - we like lime with pear chunks - you can't screw this up and it's cheap and nutritious! :) Thanks for posting!

  4. My mother-in-law makes this... I am addicted. I call it pink stuff too lololol. This year we made it with pineapple chunks and the real cream cool whip and it was even better!
     
  5. We have been making this style of Jello salad since I was little. We usually use mixed fruit or fruit cocktail. It's great with all canned fruits, including tropical. Just use a coconut, orange, or other 'tropical' flavored Jello.

  1. I used raspberry jello this time...My Mom always used Strawberry jello...our family calls it "Pink Stuff". I guess because it really doesn't have a catchy name. I did a google search for a name based upon ingredients and found this link. This is the first time making it with raspberry jello....with our family usual of peaches....I love it better than with strawberry if that is possible. lol. So tweak it next time with raspberry if you have never tried it. It is really good! Happy Easter by the way....Easter Sunday is a great day for this salad.
     
  2. We add chopped pecans to this recipe, use only small curd cottage cheese and call it Pink Stuff. It's at every Thanksgiving and Christmas holiday, and not as a dessert but a side that goes on the plate with the rest of the meal lol
     
  3. If you mix everything in a blender, like a Nutribullet, it comes out a smooth consistency more like a mousse or pudding. You can use any flavor jello, with your favorite fruit (just not fresh pineapple, it has an enzyme that breaks everything down and you can end up with soup!) OR just plain; no fruit means less carbs.
