  • Preheat oven to 350°F Generously butter a 2 quart rectangular casserole dish.
  • In a blender or food processor, puree 1 cup corn kernels with melted butter and eggs.
  • In a large bowl, combine all remaining ingredients, except parmesan cheese.
  • Add pureed corn and mix well. Pour into casserole dish, sprinkle with parmesan and baked for 30 minutes, or until puffed and golden.
  • (note: you can broil for a couple of minutes at end to get golden spots on top).

  1. Sinfully delicious & rich. I used frozen petite yellow corn & I did not puree it. Also did not brown it. I like the golden bubbly look minus the brown edge. An EZ comfort food!
     
  2. I had never heard of corn pudding, but decided to try this recipe and it was wonderful. I served it at an office party and everyone loved it and requested the recipe. Quite easy and yummy! I plan to serve it with turkey on Thanksgiving.
     
  3. I love it! Found this recipe in the magazine section of the Sunday paper. The second time I added a little bit of hot sauce (as Linda Evans suggested) and a little bit of sugar as I'm used to a sweet corn pudding.
     
  4. My family thought this was fabulous - made my tastebuds sing! I followed the recipe except used frozen corn kernals (was all I had on hand), forgot to add the corn meal, just dumped in a can of diced chilis without draining them and used shredded pepper jack. OMGosh! Delicious! It's interesting to note how reviews can vary so much. Personally, I highly recommend this recipe. Hope everyone gives it a try.
     
  5. I saw Linda Evans telling the story of this recipe on TV with Nate. Then I was so glad to see it in Parade magazine. I had the ingredients on hand (light sour cream and canned corn) so I made it last night. I was underwhelmed. It is cheesy and attractive -but just tastes kind of blah.
