“I cannot take the credit for this recipe. A dear friend of ours makes this for her family and we made sure we were there for dinner when it was. They have now moved to West Texas but my brother and husband will not let me go more than 2 weeks without making this for them. It is probably not that good for you with a whole stick of butter but as my mother says, "butter good!"”

Ingredients Nutrition


  1. Preheat oven to 350.
  2. Rinse and pat the chicken dry. Remove the innards if necessary.
  3. Season the chicken inside and out with salt and pepper to taste.
  4. Smear the stick of butter all over the inside of the bird.
  5. Place in a baking dish and drizzle with olive oil.
  6. Bake for 1 hour uncovered.
  7. Remove bird from the pan to let rest and pour all of that yummy goodness into a small pot along with the can of cream of chicken soup. Stir to combine and bring to a simmer over medium heat.
  8. Serve the gravy over rice or potatoes, we prefer rice with this one, and enjoy!
