Easy Beef (Elk, Venison, Moose) Stroganoff

"This is a recipe my mom made growing up for the family. It's easy but tastes so good. Can make unique by chopping up and adding fresh mushrooms (morels if you forage). We usually serve with a side of peas."

  • 1 lb top round beef (can use game meat)
  • 4 garlic cloves, minced
  • 2 tablespoons oil
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 pint sour cream (can use light)
  • 14 cup cream or 1/4 cup dry sherry
  • 3 tablespoons minced parsley
  • 12 teaspoon salt (to taste)
  • 1 (13 -16 ounce) bag wide egg noodles

directions

  • Slice meat against grain into thin strips.
  • Heat oil in 12" pan.
  • Sear meat in pan.
  • add garlic and cook 1-2 minutes.
  • add mushroom soup undiluted.
  • add sour cream and mix together well.
  • add sherry, salt, turn down and let simmer on low.
  • meanwhile, bring a pot of water to boil and cook pasta according to directions. Strain and put in a nice pasta bowl. Then pour stroganoff over and mix. Add parsley and toss to together. Serve.

I love to cook and try new recipes so long as it's not over the top. I am more of a baker. Our family uses a lot of game meat in our diet therefore I look for recipes to adapt most of the time on this site.
