Simple Bisquick Chicken Pot Pie

  • Preheat oven to 400 degrees Fahrenheit.
  • Bottom Crust:

  • Cut 2 tablespoons butter into 1 cup Bisquick baking mix until mixture resembles fine crumbs.
  • Stir in 2 tablespoons milk until mixture begins to form a ball and cleans side of bowl.
  • Pat dough on bottom and up to rim of an ungreased pie plate.
  • Bake for 5 minutes.
  • Heat remaining butter in 2 quart saucepan until melted.
  • Stir in 1/4 cup Bisquick baking mix, onion and pepper.
  • Cook, stirring constantly until mixture is bubbly, remove from heat.
  • Stir in chicken broth; add vegetables.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Stir in chicken.
  • Heat through.
  • Pour chicken mixture into bottom crust.
  • Mix remaining ingredients until smooth.
  • Pour evenly over chicken mixture, spread gently to edge.
  • Bake 25 minutes or until golden brown.
  • Let stand 10 minutes before serving.

  1. Just thought of something re-reading the recipe for the 3rd or 4th time......the 1/3 cup milk and the remainder of the Bisquick - is that what is supposed to go over the top of the mixture? Gosh I had to use a lot more than 2 tbsps. of milk to have the Bisquick form a ball, so used some of the 1/3 cup??? I'll wait for a bit, if I don't get a response, I'll figure that was what was meant.....although, I have to say, this could have been written a little easier......i.e. separate the crust and topping ingredients from the filling? Maybe?
     
  2. O.K. I've put together the recipe....poured the mixture into the bottom crust.....but then the recipe says . Now I must have lost my mind, because I can't figure out what ingredients are left to mix together??? Anybody out there reading this - would be helpful -this was going to be for our supper tonight?? HELP. Pour evenly over chicken mixture, spread gently to edge.

  3. instead of using cream of chicken soup, i use cream of cheddar, and use fresh vegetables such as potatoes, sweet potates, carrots, and whatever i can get my hands on..this recipe is fool proof, plus its a way the kids and i can eat our vegetables!
     
  4. My family really enjoyed this. I read many of the other reviews before preparing it and decided that it is a flexible recipe that would work well with other veggies added. I cooked celery and mushrooms with the onions, and added chopped garlic. I blanched some broccoli and stirred it in with the mixed veggies. Poultry seasoning and thyme added a bit of flavor. I used Recipe#55564 in place of the Bisquick. It was delicious! Thanks 4-H Mom for a versatile and delicious family-pleasing meal.
     
  5. A lot of reviewers have mentioned using soup... though this version does not call for it. The second top rated version does. I used this method and found the end product to be tasty and easy. I would recommend making sure your adding enough pepper, I guesstimated and I think I skimped. I also used precooked grilled chicken from the freezer section. Other than that it is awesome, I will be making it again!

Tweaks

  1. Instead of chicken broth & chicken I used Cream of chicken soup. It made it even quicker to make and my family just loved it.

  4. I make this often as well, but instead of cream of chicken I use Campbell's potato soup. I like that better because it otherwise doesn't have potatoes, which it needs!
