Easy Chicken Tagine

"Simple one-pots are perfect for the busy cook. This chicken tagine is great eaten with cous cous for something a bit more filling. You can make this dish using 4 boneless, skinless chicken breasts instead of thighs. Simply cut them in half and reduce the simmering time to 15 mins."

  • Heat the oil in a large, wide pan with a lid, add the chicken, then fry quickly until lightly coloured.
  • Add the onion, garlic and ginger, then fry for a further 2 minutes
  • Add the stock, saffron, honey and carrots, season, then stir well.
  • Bring to the boil, cover tightly, then simmer for 30 mins until the chicken is tender.
  • Uncover and increase the heat for about 5 mins to reduce the sauce a little.
  • Sprinkle with parsley and serve with lemon wedges for squeezing over.

  2. I wish I could give this more than 5 stars! It was so delicious. I used PAM in the place of oil. I didn't have tumeric or saffron in the house, so I left it out. Didn't make a difference. It was AMAZING. I served it over brown rice.
     
  3. Yummy! Thanks for posting this recipe. It was easy and full of flavor. My finicky 20 yr old son said it should go into our meal rotation and as easy and inexpensive as it is, it will! I used the tumeric instead of the saffron as that's what I had on hand and saffron can be pricey. I also went the breasts rather that thigh route as that is also what I had on hand. I forgot to add the cumin, and didn't use lemon for the garnish but didn't miss them in the final result. With couscous and a side of broccoli it made a filling meal.
