Easy Irish Soda bread

"Maybe not exactly traditional, but very easy and wonderful when toasted and spread with butter. This bread is baked in a loaf pan, and produces a very simple, dense bread loaded with raisins."

  • Preheat oven to 350 degrees.
  • In medium bowl, combine buttermilk, melted butter, egg, and raisins.
  • Set aside.
  • In large bowl, combine dry ingredients and mix to combine.
  • Add buttermilk mixture to dry ingredients and mix until combined.
  • Spoon into greased loaf pan and bake for 50-55 minutes.
  • Leave in pan for 1 minute.
  • Remove to wire rack to cool.

  1. This was great!! I followed the recipe exactly, but I had to cook it a little longer as the inside was not done. So, I covered it in foil to prevent the top from burning, but otherwise it was excellent as written!!
     
  2. Couldn't ask for anything easier or yummier!! I will definitely be making this one again! I think we all liked it even better than cornbread. I did use 2 cups whole wheat flour and one white. Delicious served with Irish stew!!
     
  3. I made this bread with and without raisin's for St. Patty's Day and my guest and family LOVED it! This recipe is a keeper :)
     
  4. Okay, I am of the opinion that "if it tastes good, who cares about tradition?" That being said, I was STOKED to find this recipe. No "cutting in" the butter, no kneading......perfect!!! I made mine in muffin tins for easier packing of leftovers in lunches. They came out great and my son is a huge fan. Thanks, Manda!!!! Forgot to mention: I baked at 350 for 30 minutes, and it yielded 16 muffins :)
     
  5. Doubled the recipe and made 2 loves. Added 1.5T caraway seed. Excellent toasted!

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!) I love the outdoors, and pride myself on being the master griller on the fire pit. My mother's side of the family is 100% Polish, so I have an inborn passion for cooking...unfortunately, along with that comes a love of eating, too!!
