Easy Irish Soda bread

1 five x nine inch loaf

ingredients
- 1 1⁄2 cups buttermilk
- 2 tablespoons melted butter or 2 tablespoons margarine
- 1 slightly beaten egg
- 1 1⁄4 cups raisins
- 3 cups flour
- 2⁄3 cup sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
directions
- Preheat oven to 350 degrees.
- In medium bowl, combine buttermilk, melted butter, egg, and raisins.
- Set aside.
- In large bowl, combine dry ingredients and mix to combine.
- Add buttermilk mixture to dry ingredients and mix until combined.
- Spoon into greased loaf pan and bake for 50-55 minutes.
- Leave in pan for 1 minute.
- Remove to wire rack to cool.

Okay, I am of the opinion that "if it tastes good, who cares about tradition?" That being said, I was STOKED to find this recipe. No "cutting in" the butter, no kneading......perfect!!! I made mine in muffin tins for easier packing of leftovers in lunches. They came out great and my son is a huge fan. Thanks, Manda!!!! Forgot to mention: I baked at 350 for 30 minutes, and it yielded 16 muffins :)

I am a single gal, living on my own; currently working as an Occupational Therapist & living in Cumberland, MD. (It is "God's Country" out here...beautiful!) I LOVE to cook and bake, and love anything that looks, tastes, smells, or even closely resembles a veggie. I LOVE moo-cows, and therefore, cannot bring myself to eat any part of the adorable critters (i.e. NO RED MEAT!!)
