Easy Italian Sausage and Peppers

"My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed."

directions

  • Heat the oil in a large pan, over medium heat.
  • Add the sausages and cook, turning frequently.
  • You want them browned all over and this takes about 10 minutes.
  • Add the onions and stir up the browned bits on the bottom of the pan.
  • Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
  • After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

Questions & Replies

  1. At what point do you cut the sausages?

  1. I'm not sure about the rest of the country, but here in NJ, once a year, various cities have what are referred to as Italian Feasts, which are nothing more than a block party during some religious festival, where food stands are set up. These sausage and pepper subs are probably the most popular food. They are also found at food stands on the boardwalks of various Jersey shore locales. This recipe is right on the money.

  2. Before you saute the sausage, boil a pot of water and once it is BOILING, prick each sausage on all sides and plop into the boiling water for 3 minutes. You will see the fat oozing out of each sausage and then you can continue with the recipe ;-) You will know if your sautee is right if some of the peppers "catch" and brown. I always use either cast iron cookware or enamelware to get it right ;-)

  3. This is a fantastic recipe. Very traditional, the way my family has always made it also. Most of the time if I eat out the chef tends to add tomato sauce to the recipe. tomato sauce has never been in my family's version. Ours is just like this one. Thanks for sharing it!

  4. I used kielbasa and hot dog buns. They were very sloppy to eat and required many napkins! I asked my DH to check the liquid and add some if it looked too dry......he added beer from his glass! Is spite of all that this is a fantastic recipe! I think it would work well in a crock pot too! DH requested it several times a week!? Thanks for a great recipe.

  5. I've been craving sausage and peppers, but have never really made them before. I had an idea, but needed a general guide. These were exactly what I was craving! I even "made" my 9 year old try it. He was protesting, saying that he doesn't like peppers, but I insisted. After the first bite he said he wanted a bowl of it! Thanks for posting such a simple, authentic, fantastic recipe!

  1. Wonderfully delicious! DS & I loved this. I used turkey sausage and turkey kielbosa with 1 red pepper, green pepper. Instead of oregano I used 2 tsp of Italian seasoning. I topped the rolls and fillings with a thin slice of baby swiss cheese. Wow, what a great dinner. Thanks for the recipe, def make it again!
