Easy Lemon Cheesecake Bars

  • Mix together dry cake mix, 1 egg and the oil, until crumbly.
  • Set aside 1 cup of this mixture.
  • Pat remaining mixture into bottom of ungreased 9x13 pan.
  • Bake at 350 for 15 minutes.
  • Remove from oven.
  • In bowl, beat together cream cheese, sugar, lemon juice and remaining egg until smooth.
  • Spread over baked crumb mixture.
  • Sprinkle remaining crumb mixture over that.
  • Return to oven for 15 minutes.
  • Cool in fridge and cut into bars.

  2. These are great angelfan!! Made a batch this afternoon for DH since he loves cheesecake things! I couldn't believe how easy they were, and yet they were so very tasty! I've got to pick up more cream cheese tomorrow and make another batch for the freezer. Thanks for sharing!
     
  3. Angelfan: I made these last night to take to the office this morning. I could not believe how easy it was. One bowl, mixer attachment, spatula and baking dish... it cannot get any easier than that. Everybody loved them, including dh who only got one), and I will them again and again.   4. A good, easy recipe. Next time, I would double the filling, though. And add more flavoring, lemon juice and extract. And a pinch of salt. It's a little bland, but nothing that can't be fixed. If you would like the crumbs easier to sprinkle on top, cut in about 2 tablespoons flour into the remaining cup of crumb mixture. How about chocolate cake mix for this? And vanilla flavoring for the filling. Quite useful for a last-minute dessert. Thanks for sharing . . . Janet
     
  5. What a nice easy recipe with delicious results!!!! Followed the recipe exactly and the only thing that I would do differently would be to either add a little more lemon juice or use a lemon cake mix as I was expecting MORE of a lemon flavor to them. They turned out very nice and will definately be making them again. Thanks for a great recipe!!!

I grew up on a farm and learned to cook from scratch. By age 9 I could follow a recipe.So I have been cookng for a lot of years now. Besides cooking I enjoy bible study, church, crafts, collecting rings and Christmas ornaments, reading, collecting angels and visiting with friends via E mail. Have been married for over 30years and have four children, two of which are handicapped. The kids are all grown now and I am getting use to cooking smaller portions. Recently found out my husband has non-hodgkins-lymphomia. He will start treatment soon. Learning more about healthy eating and healthy cooking.
