Easy Lemon Self Saucing Pudding

Batter Base
- 1 cup self raising flour
- salt (a pinch)
- 1⁄2 cup caster sugar
- 1 teaspoon lemon rind (grated)
- 2 tablespoons butter (melted and mix in milk and vanilla)
- 1⁄2 teaspoon vanilla extract (or essence)
- 1⁄2 cup milk (I used hi-low)

Sauce
- 1⁄3 cup sugar (could possibly cut this by half)
- 1 teaspoon lemon rind (grated)
- 1 cup water (boiling)
- 1⁄2 cup lemon juice (about 2 lemons)
directions
- Preheat oven to 180°C.
- Grease a 4 to 6 cup casserole dish (deep sides).
- Batter Base - sift flour and a pinch of salt together and then add sugar and grated lemon rind, mixing well together.
- Stir in melted butter , vanilla and milk mix and stir until all flour mix is incorporated.
- Pour into prepared casserole dish.
- Sauce - Sprinkle the mixture with the sugar and lemon rind.
- Combine the boiling water and lemon juice and carefully spoon some of over the batter and sugar topping, until fully covered and then pour the rest of the mix over the back of the spoon.
- Bake for 30 to 40 minutes and let stand for 5 to 10 minutes before serving (very important to allow the sauce to thicken or otherwise will have runny liquid).
- Serve with cream and or icecream.

What a comforting pudding! This was Very easy and had a wonderful lemon flavor with a nice cake like top and a sauce bottom that bubbled up all around. I cut the recipe down to serve two and baked in two custard cups with no other changes being made. We enjoyed it as is but think a scoop of ice cream would be delightful also. Thanks so much for the post we are sure to be enjoying again.

I really appreciated the ease with which this recipe came together, & THIS PUDDING IS REALLY AN AWESOME DESSERT, especially for those of us who love our lemons! I did cut back on the sauce sugar, but only a little, from 1/3 cup to 1/4 cup & that worked very well! This served for of us very nicely, even if I did have an especially large portion! With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
