EASY! Penne with chicken, spinach and tomato Alfredo (soooo good!)

- 1 box penne pasta (use Barilla brand!)
- 1 1⁄2 lbs boneless chicken breasts
- 2 jars Classico Alfredo with sun dried tomatoes
- 1 box chopped frozen spinach
- 1 (14 1/2 ounce) can diced Italian tomatoes
- salt and pepper, to taste
directions
- Thaw spinach completely in a colander lined with a few paper towels.
- This may take a few hours.
- Squeeze spinach completely dry.
- Set aside.
- Cut up chicken into bite size pieces.
- Brown in a skillet.
- Keep warm.
- Cook penne according to package.
- Meanwhile, in a medium sauce pan, add both jars of sauce, tomato and spinach.
- Bring to a simmer on low heat, stirring occasionally.
- Continue simmering for 10 minutes or so.
- When pasta is done, drain and place in a large serving bowl.
- Add chicken and stir.
- Add Alfredo mixture and stir again.
- Serve right away with garlic bread.

Great easy meal. I did adapt the recipe to suit my last minute needs. I didn't have any chicken defrosted and instead subbed cheese tortellini for the penne and chicken. I started out by sauteing onion and garlic in olive oil and added 1 bag of chopped fresh spinach to wilt down. To this, I added a can of petite diced tomatoes and 1 jar of the pasta sauce. I think that the tomatoes perked up the sometimes heavy flavor of jarred cream sauces. It was a great quick dinner that saved the night when I discovered the pork chops I had planned were spoiled.

This recipe was quite good. My husband and kids liked it alot. I think next time I will try a different sauce, perhaps the roasted garlic one, as I didn't really like the aftertaste of the sundried tomato one. Just a personal preference, though, this recipe is definitely worth making again and again.

Delicious! My family loved it. I had to adapt based on what I had on hand, and it still turned out great. I made a low fat alfredo sauce rather than using the store bought kind. I also discovered too late that I didn't have the diced tomatoes, so I substituted stewed tomatoes with italian seasonings and diced them. They have a stonger flavor which came through nicely in this dish.

Very nice dish. I added some green onions to mine, and they blended nicely. I also used grilled chicken pieces instead of breasts. I agree with another reviewer, that the sauce had an after taste that made it difficult to eat as the main meal. Maybe as a side dish? Overall, very tasty...thanks for posting.

For my summer vacation I spent 2 nights with each of my 3 married children and cooked for them. This was my favorite dinner I made. My son, DIL, DH, and grandchildren loved it! I made it using the garlic alfredo as suggested. We had leftovers for lunch the next day. WOW for both days! Now that vacation is over, I'm making it for dinner here at home tonight. I'm going to add an extra jar of alfredo sauce, because I like alot of sauce. I might try broccoli instead of spinach too. Tried the broccoli, wouldn't suggest it--the spinach is the best. I noticed I didn't give this stars--definitely 5 star!!
