  • Bring to a boil: water, vinegar, spices & sugar.
  • Peel roasted beets. Cut into quarters or slices. Pack into clean quart jar.
  • Pour hot brine over beets in jar. Cover beets completely (add filtered water if needed).
  • Store in fridge for 3-4 days, then enjoy.

Tweaks

  1. I didn't tweak anything. I always make things according to the recipe first time...and quite frankly...I wouldn't change a thing!
     
  2. Instead of whole spices, I used ground. It's difficult to explain quantities, so I'll simply say that I added the spices a little at a time to make the beets "to taste." They're always a hit at potlucks and a staple in our 'fridge.
