  • Brown the beef and onion in a dutch oven, then drain.
  • Add all ingredients to the beef/onion mixture, except for the tortilla chips and cheese.
  • Cook over medium heat until thoroughly heated.
  • TO SERVE: Crumble a handful of either tortilla chips or Doritos in individual serving bowls and cover with a generous helping of stew.
  • Sprinkle with cheese.
  • HINT: You can reduce the heat by substituting the pinto beans in chili sauce with either red kidney beans, plain pinto beans, etc.

  1. This stew was fast and easy to make and it tasted great! I actually used some leftover chicken I had on hand instead of hamburger. I loved the chicken in it and can't wait to try the hamburger. It was a little spicy for us so when I served it I added a spoonful of sour cream.
     
  2. Great! We loved this Stew! It was so easy to put together because I had all of the ingredients in my pantry. I loved the taste, just like tacos', only no chopping!! It was a good hot soup to serve at lunch, and it was hearty enough that I didn't serve anything else. I used tortilla chips, warmed in the microwave. Thanks for sharing this wonderful recipe.
     
  3. This is a wonderful stew! Hearty and flavorful. I made it exactly as stated except I didn't use the pinto beans in chili sauce. Just used plain pintos and it was just right for us. I am so glad to have found this recipe!
     
  4. This is EXCELLENT!! What a quick and easy way to wip up a very flavorful and hearty stew. Perfect for a cold and wintery day. I substituted a can of red kidney beans for the beans in chili sauce because I don't care for spicy food. It turned out perfect for my tastes.

  1. Amazingly good and so simple! I couldn't believe how good this turned out. I didn't want to stop eating even when I was full! lol Thanks for the delicious recipe! We used Dark Red Kidney Beans instead of Pinto beans with chili sauce and it was fantastic. I think if it would have been any spicier it wouldn't have been enjoyable for a meal more for a snack. And I LOVE spicy food so that is telling you something. It is fine without the chili sauce. :D Also used 1.5 pounds of meat and 1 and 1/2 packets of taco seasoning. Mmm Mmmm!
     
  2. Loved it. I used yellow hominy instead of corn just to give it that authentic Mexican touch. I reduced the water to 3/4 cup. A keeper for sure. Thanks, Merlot.
     
  3. I keep trying Merlot's recipes and they keep being 5 Star gems. This one is no different. It was SO easy to throw together after work but tasted like I had been cooking for a long time. Onion powder instead of onions was the only change I made. I served it with crushed tortilla rounds, sour cream, shredded cheese and flour tortillas and it was DELICIOUS! This will be on our menu on a monthly rotation for sure but next time I will double the recipe as there was not a drop left!
     
  4. YUM! This was awesome! My husband got seconds, and my grandfather went back for thirds! The only things I did different were that I used tomato sauce instead of soup, and no beans. I'll be making this again soon! Thanks for the recipe!
     
  5. INCREDIBLE! I used petite diced tomatoes and two cans of diced chilies in place of the Rotel, and a can of black beans in place of pinto (personal preference) and homemade taco spice. Threw it all together in the crockpot. Added a dollop of sour cream and shredded cheddar and had me some heaven in a bowl! This pairs wonderfully with Yeast Corn Rolls Recipe #101266.

Hubby and I were fortunate enough to be able to retire early and now enjoy traveling in our motorhome :) . Our travels have taken us all over this great country of ours and meeting new and exciting people along the way is an extra bonus. We are blessed. We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can. I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979. I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
