- 1 lb chicken breast, cut into 1-inch cubes
- 1 tablespoon oil, divided
- 1⁄4 teaspoon salt
- 1 tablespoon fresh ginger, minced
- 1 cup coconut milk
- 1 1⁄2 cups chicken broth
- 1⁄4 teaspoon red pepper flakes
- 2 teaspoons fish sauce
- 1 teaspoon sugar
- 1 tablespoon Thai red curry paste
- 1 tablespoon peanut butter
- 1 red pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 6 ounces egg noodles
- 1⁄4 cup cilantro, fresh, minced
directions
- Sauté chicken cubes with salt, in 2 tsp oil until no longer pink. Remove chicken to a separate bowl.
- Add remaining oil to the pan along with the ginger and sauté for 30 seconds.
- Then add coconut milk, chicken broth, red pepper flakes, sugar and fish sauce.
- Whisk in Thai red curry paste and peanut butter, bring to a simmer.
- Add the sliced peppers and continue to simmer until tender.
- Add the chicken cubes.
- Cook the noodles (or rice) according to package directions and drain.
- Add the cooked noodles to the chicken and sauce, heat through.
- Sprinkle with minced cilantro.
- If you want your sauce a little thicker or less "soupy", add 1/2 tsp cornstarch mixed in a little cold water to the sauce and stir well.
