  • Dice tomatoed and avocados mix together lightly with out smushing the avocados.
  • in a separate dish mix the finely chopped onion 1 tsp of salt and water or oil together. taste it you may need to add the other half of the lemon and some additional salt.
  • This mix needs to be very salt and tart to spread nicely.
  • Stir all the ingredients together.
  • Serve cold with hot white rice.
  • Yummy.
  • Note. If you dont like tart things dont make this recipe.

  1. After eating so much rich holiday food, this really hit the spot. I love the simplicity of the recipe and the way all the flavors and textures complimented each other. Next time I would add more red onion and let the salad marinate a while before serving. Thanks for posting the recipe.
     
  2. Very delicious! We loved the tang of this recipe. I ended up needing a quick protein source, so I added some tuna to it. With the lemon, that was a nice compliment! When I make it again, I'm going to add a clove or two of garlic to add a little zing to the tang! :)
     
  3. This recipe is fantastic, especially if you like lemon and avocado. I usually find that I need to use the extra lemon.
