  • Prepare edamame according to package directions. Drain and rinse with cold water. Set aside to drain thoroughly.
  • Combine edamame, corn, red bell pepper, green onion, red onion, parsley, and oregano.
  • In a large bowl, whisk lemon juice, mustard, olive oil, salt and pepper. Add veggies to bowl and toss to coat. Refrigerate until ready to serve.

  1. Directions mention oregano while ingredients say marjoram or basil. Which herb and is it dried or fresh?

  1. I really loved this salad! I left out the green onion and am glad I did because it would have been too onion-y for me. I also subbed cilantro for the parsley because my grocer was out. The mustard/lemon is great and has a very nice zippy adult flavor. Will make again!

  4. Made half a recipe to have with a light lunch. The salad is excellent. Not having the red onion I left it out. The dressing really makes the salad.
     
  5. Very tasty, instead of all the corn, I did a mixture of corn, black beans and sugar snap peas. yummy :)
