ingredients
- 1⁄2 cup light margarine
- 1 cup sugar
- 2 teaspoons unflavoured gelatin
- 6 tablespoons cold water
- 4 tablespoons hot water, plus
- 2 teaspoons hot water
- 1 cup fat free sour cream
- 2 cups unbleached flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons vanilla
directions
- Preheat oven to 350 and lightly grease 1 muffin tin or line with paper cups.
- In a large bowl, cream margarine and sugar. In a small bowl whisk together the gelatine and water; beat into marg./sugar mix. Stir in sour cream.
- In a medium bowl, mix dry ingrerdients. Add in thirds to marg. mixture. Stir in vanilla. (*at this point you can add citrus zest, mini chocolate chips, dried cranberries, etc.).
- Spoon batter into tin/cups. Bake 13-15 minutes. Cool before frosting.

Why "SoupCookie"?
My cousin Ryan use to come to my house after school sometimes and was *always* hungry! So he used to make his version of chocolate chip cookies and I can't remember what he did or didn't do right but the cookies never failed to come out flat and doughy and gooey. We'd put them in a bowl with milk and eat it with a spoon.....sooooo good!
To this very day his recipe has not been deciphered ;)
