Eggnog Cheesecake

"This is a beautiful dessert. Especially if you go to the trouble of placing the cookies and ribbon around the outer edge of the cheesecake. My family asks for this every Christmas, and my husband loves to take it to work parties for the rave reviews."

  • Trace springform pan onto a piece of parchment. Place in bottom of pan before continuing. (This will help in getting cake out of pan easier).
  • Reserve one cookie for garnish, if desired.
  • Cut 1 inch piece off one end of each of the remaining cookies.
  • Crush 1 inch pieces into crumbs; set aside remaining cookies for sides of cake. Combine cookie crumbs, graham cracker crumbs and margarine until well mixed.
  • Press crumb mixture firmly into bottom of 9-inch springform pan.
  • Beat cream cheese at low speed until smooth.
  • Gradually add 1 cup of the eggnog, blending until mixture in very smooth.
  • Add remaining eggnog, milk, pudding mix, rum and nutmeg.
  • Beat until well blended, about 1 minute. Pour cream cheese mixture carefully into pan.
  • Chill until firm, about 3 hours.
  • Run hot metal spatula or knife around edges of pan before removing sides of pan.
  • Press remaining cookies, cut side down, into sides of cake. Wrap ribbon around cookies and tie.

  1. I am very disapointed with this recipe!!! I've been looking for an eggnog cheesecake since after Thanksgiving and this is all I found. The recipe calls for 2 packages of bakers german chocolate, but doesn't state when /where /how it's used. THEN It mentions cookies. WHAT KIND??? I admit I know very liitle about baking, but I am trying. Every other recipe I took off of this site was very easy and tasty. I wouldn't know about this one.

  2. My family loves this cheesecake, and we do not like eggnogg. I have submitted the necessisary changes from the original person who submited the firt recipe. You do not need bakers chocolate, you need 2 packages of Chocolate laced pirouette cookies. Also I always use Reddi-Wip topping to decorate around the outer top. But only just before serving because it will melt and becomes mushy. I suppose if you want a truer cheesecake you could make a traditional cheesecake for a bottom layer and then do a half batch of this for a top layer. Then it would be less like a pudding.

  3. What do you do with the chocolate? What kind of cookies are we needing here? This is more like a frozen dessert than a true cheesecake, but the filling tastes ok.

  4. I have to agree with Nancy...the recipe calls for cookies in the instructions and lists german chocolate in the ingredients???...I, too, was looking for a good eggnog cheesecake recipe...this definitely won't be the one. If I find one, I will post it.

  5. I loved this recipe! It took only minutes to prepare and my children (all under 12 yrs) also made one with NO difficulty. It was a success at the party. If you have trouble finding the chocolate for the crust, or are in a hurry, simply use the premade chocolate grahm cracker crusts...they work just as well. Thanks again!
