  1. Place about 1/4 cup SPAM, 1 tablespoon onion, 1 tablespoon green pepper, 1 tablespoon tomato and 1 tablespoon cheese on one side of tortilla.
  2. Set remaining cheese aside.
  3. Roll up jelly-roll fashion and place seam side down in greased 13x9" baking dish.
  4. In small bowl combine remainin ingredients and blend together with wire whisk.
  5. Pour over ehchiladas.
  6. Cover and refrigerate overnight.
  7. Heat oven to 350.
  8. Bake, uncovered, for 40 to 50 minutes or until egg mixture is set.
  9. Sprinkle with remaining cheese.
  10. Return to oven and bake for 5 minutes or until cheese is melted.
  11. Serve with picante sauce.
