  • Saute bacon until crisp add onion and saute for 5 minutes.
  • Add beans and broth cover and simmer 20 minutes;
  • Add salt, peppe and cilantro,
  • Toss to mix and serve.

  1. We were fortunate to pick up fresh fava beans at the farmers market at Friday Harbor on San Juan Island this weekend. We’re staying in a B&B with a kitchen so a simple recipe was preferable. I made these with Canadian Bacon, a shallot and butter sautéed together and then added the fresh beautiful beans and low salt organic canned chicken stock. After twenty minutes I decided to cook them down until there was no more liquid and they caramelized just a little and then I stirred in the fresh cilantro at the end as prescribed. I should have made a double recipe because this is killer! If you’re making these for someone who is squidgy on fava beans and only knows them from a famous movie, just make them try one bite with their eyes closed and they’ll surely change their minds. Pouring a nice chianti will just be an added bonus! Thanks for the recipe!
     
  2. This was so easy and sooooo good. I subbed Lima beans for the fava beans, because I could not find them (and to be honest I am obsessed with lima beans). I love the use of the chicken broth here. It adds a whole different dimension. I subbed Cavender's Greek seasoning for the S&P and we ate the whole entire dish! I will be making these a lot! What could there be not to love? You got have the bacon, onions, broth, S&P. And the best darn beans on the East, South, North, and the whole West coasts. Delicious!
