  • cut salsify roots in half & boil in salted water for 30 minuites.
  • rinse in cold water.
  • peel & cut into 3 inch pieces.
  • make the batter:blend all the indgredents in a food processor for 30 seconds.
  • heat the oil in a large frying pan.
  • dip the salsify in the batter and fry in oil until crisp & golden turning.
  • keep warm whil cooking the remainder.
  • serve hot with lemon wedges.
