- 1 cup flour
- 1 teaspoon baking powder
- 1 egg
- 1 tablespoon olive oil
- 1⁄2 cup water
- 1⁄4 teaspoon harissa
- 1⁄2 teaspoon cumin
- 1⁄4 teaspoon dried thyme
- salt & pepper (to taste)
directions
- cut salsify roots in half & boil in salted water for 30 minuites.
- rinse in cold water.
- peel & cut into 3 inch pieces.
- make the batter:blend all the indgredents in a food processor for 30 seconds.
- heat the oil in a large frying pan.
- dip the salsify in the batter and fry in oil until crisp & golden turning.
- keep warm whil cooking the remainder.
- serve hot with lemon wedges.
