Flying Biscuit's Creamy Dreamy White Cheddar Grits

"This recipe is from The Flying Biscuit, an awesome little resturant in 2 locations in Atlanta GA. You always have to wait a few minutes to be seated but I would wait days if I had to to eat there. The biscuits and the grits are what makes this place so popular and the atmostphere is euphoric."

  • In a saucepan, combine water, half-and-half, salt and white pepper and bring to a boil. Slowly pour grits into boiling water while whisking the entire time. (Watch out for splattering; mixture is very hot.) Reduce to low heat and continue to whisk often, until thick and completely smooth, about 10 minutes.
  • Add cheese and stir gently until cheese melts. Whisk again to combine. Turn heat off and allow grits to rest 5 minutes. Add butter and stir until completely smooth, silky and shiny.

  1. I've tried the recipe after visiting the FBC, and the grits made at home was off. So, the next time I visited, they said they modified the recipe since the FBC cookbook came out. This recipe is no longer correct. It may have been correct at one time, but not now. FBC changed the recipe. Now its 3 cups water, 3 cups 1/2 & 1/2, and everything else is the same.

  3. AMAZING grits - exactly like Flying Biscuit's! I always feel nervous about making recipes that claim to replicate something from a restaurant, but this one really is dead on.
     
  4. Thank you so much for posting this recipe! I ate breakfast at The Flying Biscuit in Buckhead in February and LOVED their grits! I tried your recipe, but I used the "change the serving size" feature to change it to 2 servings instead of the 12. RecipeZaar did the calculating and it came out perfect. Just like the restaurant, creamy and delicious!
     
  5. Great grits!!! My fiancee lived in Atlanta for many years and loved Flying Biscuit. She was SO EXCITED when I made this for her. Her comment was "I no longer need to go to Atlanta!" but she said it was a bit sweeter there. Perhaps they use a different type of grit. Thanks!!!

  2. Just t tied this recipe but substituted whole milk instead of half and half and went less on the salt. Seriously sharp Cabot white cheddar was good in this. Great recipe. A Def keeper!

<p>I've noticed plenty of members are animal lovers. That helps me feel right at home. I have 3 cats that I could tell stories about all day.. <br />My daughter is 9 and never know what to expect when it comes to meal time unless she put in a special request. <br />I love cooking new things all the time since I get bored fairly quickly. Of course there are those recipes that I can't get out of my head and I make them over and over. <br />Following directions is very difficult for me so I use recipes as guidelines and that is it. If something really works for me, I post it. <br />A lot of my favorite recipes are copy cat. I would much rather make something I love from a restaurant than actually go. <br />I make Alice Springs Chicken monthly and Cottage Cheese pancakes at least 4 times a month. Those two recipes will never get old in this house. <br />If I'm taking pictures of my freshly made food, my DD knows she's gonna be trying something new.
