French Onion Soup

- 6 medium sweet onions (I used 3)
- 3 tablespoons butter
- 2 bay leaves
- 2 tablespoons fresh thyme leaves
- salt and pepper
- 1 cup dry white wine (I used Pinot Grigio)
- 1 quart beef stock
- 2 tablespoons Worcestershire sauce
directions
- Caramelize onions in large soup pot with butter, bay leaves, thyme, salt and peper. Stir frequently and let caramelize for about 40 minutes over meduim heat.
- Deglazed pan with wine for a minute stirring constantly. Add stock, worcestershire and salt and pepper to taste.
- Simmer 15 minutes.
