French Toast Croissants

- 1 tablespoon flour
- 4 egg yolks
- 1 1⁄2 teaspoons vanilla
- 2 cups heavy cream
- 1⁄2 cup sugar
- 2 scoops vanilla ice cream
- 2 cups raspberries
- 4 tablespoons sugar
- 3 eggs
- 4 plain croissants, split
- 2 tablespoons butter
directions
- Mix flour, yolks and vanilla, set aside.
- Bring cream and sugar to a boil, remove from heat.
- Stir a small amount of hot cream into the egg mixture.
- Quickly stir egg mixture into cream mixture, stir constantly.
- Bring to a gentle boil; cook and stir for 1 minute.
- Remove from heat; stir in ice-cream until melted.
- Set aside.
- Mix berries and sugar in small saucepan.
- Simmer for 2 minutes.
- Remove from heat; set aside.
- In shallow bowl, beat eggs.
- Dip both sides of croissants in egg.
- Brown on both sides in butter.
- Spoon vanilla sauce over croissants.
- Dot with berry sauce.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
