Fresh Pesto and Tomato Salad

ingredients
- 1 medium tomatoes, sliced fairly thickly
- 1 tablespoon pesto sauce, fresh is best
- 1⁄2 teaspoon pine nuts, toasted
directions
- Lay the tomato slices out on a plate with the ends just overlapping.
- Drizzle the fresh pesto liberally over the tomato slices.
- Scatter with your toasted pine nuts and enjoy.

LOVE this salad! I looked outside this morning and decided it was time to get all the leaves off the basil plant so it could start fresh again. . .and luckily stumbled upon this recipe. I took your advice and made Recipe #144195 which was fabulous. I literally didn't even sit down. . .gobbled this right up in about 2 minutes flat. Can't wait to make this again for my husband, as this is a real winner! THANKS for sharing. Made for Veggie Swap July 2010.

This is an amazing recipe. For something soooo simple it drew gasps of delight from our guests. Freshly made pesto using Recipe #144195 with lightly toasted pinenuts sprinkled on tops, it looked good and tasted explosively awesome : ))) Thanks Sarah Jayne for a recipe we will use over and over and over.

Wow! How can something this simple be so good. I'm already craving more. I had made fresh pesto last night, happened to have a just-picked tomato from my garden and pine nuts in the fridge (leftover from making the pesto). I feel like one lucky girl. I opted to not toast my pine nuts. This was so tasty, fresh and healthy. I think I'm headed out to the garden to pick another tomato. :) ~Made for the Oct. Veg*n Swap~

I am originally from the Philadelphia area of the United States but have been living in London, UK since 1996. I now have dual American and British citizenship. I became a widow at the age of 27 in 2004 but have managed to fall in love again and was married again on July 19, 2008.

These days, I am trying to eat a lot less meat. So, I am trying to have as many vegetarian recipes in the week as I can manage. I have started a blog - <a href="http://weekendcarnivore.com/">Weekend Carnivore</a> where I blog about trying to eat a mostly vegetarian diet. I share a lot of my discovered recipes there. If I make one of your vegetarian recipes and I managed to take a good photo of it, chances are I will blog about it and tell everybody how much I enjoyed it.
