  • Soak clear noodle in hot/boiling water till soft.
  • Place oil and garlic in large pan/wok and cook, add noodles, stir fry.
  • Add soy sauce, garlic powder, and pepper.
  • Remove from heat and place in bowl.
  • Assemble other ingredients on counter or table in bowls.
  • Soak 1 rice paper in warm water until soft,no longer than 30 seconds (or they will get too soggy) and lay on a plate or counter.
  • Layer on rice paper: lettuce, plum sauce, chicken, noodle, cilantro, basil, sprouts, (all to taste but remember that you have to roll this all up inside).
  • Carefully start to roll up eggroll style, tucking in the sides, then continue to roll up.
  • Serve immediately.

  1. In the picture of the spring roll ingredients, it looks like there is some carrot and maybe red pepper slices. But, I don't see those ingredients listed in the menu. Are there carrots or other ingredients not listed?

Their food and service has always been great. We have been going there for about 11 years now.Fresh Spring Rolls are our favorite sometimes I have order 2 or 3 orders for a meal.

  3. These are such lovely and fresh tasting spring rolls. I added some julienned carrots but didn't change anything else. Served with Nam Prik Nam Pla recipe#92042. Thanks for a great recipe.
     
  4. Fresh, exotic, delicious AND healthy! Who could ask for more....oh yea, easy would have been nice. These were a bit fussy to make, and it took me several attempts at getting the right amount of filling so that the rolls stayed together and were manageable. I had medium sized rice paper, and wished I had the larger ones. I think the best amount of filling isn't much more than 3 tablespoons full. We thoroughly enjoyed this recipe Kimke and are so glad you posted this for us to make.

I live in Omaha NE and am an audiologist at Boys Town National Research Hospital. I love to cook, as does my husband Michael. In the summer, we have a large garden and try to use alot of fresh fruits/veggies in our cooking. We have a 5 year old daughter, Kate and almost 2 year old son Sam and enjoy introducing them to new foods. One of their favorites is fresh pesto smeared on crackers!
