  • In large skillet, heat the oil over medium-low heat.
  • Add the onions, cover, and cook until translucent, 5-10 minutes.
  • Remove the cover, add the zucchini and cook for a few minutes.
  • Add the tomatoes, sugar and Italian seasoning, cooking until heated through.
  • Serve over pasta and top with Parmesan cheese if desired.

  1. Delicious! I used half oil, half butter to soften the onions. I also added 1/2 tsp salt. Very yummy!
     
  2. I had lots of zucchinis and a leek to use up so this was the perfect recipe for me !! It makes a good amount so half was eaten with pasta and really enjoyed and the rest is in the freezer.
     
  3. I have made this recipe several times and I love it and most of the people I have served it to has also really liked it. Some have asked for the recipe. I like the vegetables to be firm and not overdone to mushiness. I saute the onions a little before adding the zucchini. Then add the fresh tomatoes at the very end of the cooking process because it does not take much to cook them. I also add chopped garlic, salt and black pepper to taste. I did not have enough fresh tomatoes one time, but did have a jar of mild tomato salsa opened and added approximately 1/2 cup of the salsa. I believe the salsa really improved the taste of this recipe for me. This sauce tastes good hot or cold, with or without pasta. Also is really good with spaghetti squash.
     
  4. It is nice, but could need a little browning of the zuchini and a little garlic
