  • Marinate the chicken w/ the juice of one lime and the oil and garlic in a zip lock bag in the fridge for at least 2 hrs or overnight.
  • For the salsa mix all the ingredients and season with salt and pepper to taste, set aside for the flavors to blend, mean while grill the chicken breasts on low heat till no longer pink.
  • Place 1 cup of rice on each plate cover with a chicken breast and then divide the salsa amongst the 4 plates and serve.
  • Time does not include marinade time or time to steam rice.

  3. I made this recipe for my boyfriend the first night he came round to stay (ahem). The dinner was practically inhaled (even if I did have to do the chicken in a sandwich toaster) and the night went very well (*AHEM*). He's now my fiance :-D And, as a point, I've made the salsa independant of the meal and bottled it in the fridge, keeping it on hand for impromtu 'romantic nights' in a hurry, and have served it with chicken and pasta/rice/couscous and have also blended it to within an inch of solidarity and used it as a dip and garnish with great results.
     
  4. We loved this. My husband is not usually a fan of anything healthy or with fruit and he gobbled this up. I rarely like anything with grilled chicken, but this was wonderful. I put the ingredients for the salsa in a mini food processor. It came out not as chunky, but I prefer equally sized pieces in the salsa. I made it early in the morning, and at first tatse, I though the salsa was a complete waste, but after spending the day in the fridge, it was marvelous. I will do this again soon.
     
  5. My husband and I loved this recipe. Light, healthy, and tasted great. The only changes I made were omitting the lime juice (my husband detests limes), adding salt and pepper to the chicken before marinating, and using canned mangos (my grocery store was out of fresh). This will definitely be added to our usual rotation.

Tweaks

  1. Yummy! This was so good! I had to modify because of picky eatters in my home, so I left out the red pepper and green onion. I replaced the serrano with fresh, diced jalepeno, added diced jimica, and used honey instead of sugar. I went nuts with the cilantro, because we love it so much, and put 1/2cup chopped into the marinade, and even added lime juice and cilantro to the rice. Gosh it was good. Couldn't keep everyone out of the salsa as the chicken was on the grill! Thanks!!!
     
  2. I love this recipe. It is very easy to make and tastes great. This is one of those recipes where you can thoroughly impress your guests (or date) with your cooking ability when in reality it doesn't take much effort to make. This recipe goes extremely well with Bolla Pinot Grigio. The lime flavors are a perfect match. I prefer having this with Rice Pilaf instead of regular brown rice but I tend not to be too much of a rice fan anyways. I got a strange look from the cashier at the grocery store when I bought the one serrano pepper. They are very small and I only needed one so it came out to $.02. I probably paid more for the plastic bag than I did for the actual pepper but for only 2 cents, who cares.
     
  3. Yum!! We really enjoyed this recipe. Loved the lime and garlic flavour of the chicken and the salsa was so tasty and colourful. The meal looked gorgeous plated up and tasted even better. I subbed jalapenos for the serranos due to availability and left out the sugar. Wonderful dinner!!
