  • Cook potatoes until tender.
  • Drain.
  • Combine potatoes with salt, onion, butter, cream cheese and sour cream.
  • Whip until fluffy.
  • Stir in cheese.
  • Butter 24 med muffin tins.
  • Using ice cream scoop, place potatoes in muffin tins.
  • Bake at 350 for 30 minutes.
  • Can be frozen.
