I made this a couple of nights ago and it was wonderful! As most folks know I'm not normally much of a fan of meatloaf...after many years of making a 1/2 pound of cheap hamburger stretch into a meatloaf for 4 when the kids were growing up....and money was very tight. There is only one other meatloaf recipe on this site that I recently tried that I actually enjoyed eating. This one comes close to even beating it! I liked it so much that I took a big slice and made a sandwich out of it later in the evening. Like one of the other chef's must have done...I placed extra applesauce on the top...since I lost my appetite for just putting ketchup on the top. Fabulous! Doesn't taste like traditional meatloaf...probably why I liked it!

I did this for a dinner party as It was something I could prepare in advance. It was beautiful and all my guests raved over it. It was a large quantity so we had it warmed up the following day for sunday lunch. It was really tasty, and the apple sauce gave it a lovely sweetness. I also used some of the mixture to make meatballs for my children and they loved it too.

I reduced the amounts to make a smaller meatloaf and prepared in a crockpot to avoid turning my oven on in this heat. It turned out great. I did feel it needed a bit more seasoning, but I will make this again. The applesauce lent a slight sweetness and my DH loved it the next day for sandwiches. Thank Debbie!!! =)
