  1. In large frying pan over medium high heat, cook bacon; remove with slotted spoon and set aside. Return pan to heat and add onions, carrots and celery. Sauté until tender, but not browned.
  2. In large pot over medium heat, combine bacon, sautéed vegetables, ham bone, lentils, pepper, thyme, bay leaves and stock.
  3. Simmer for 1 hour or until lentils are tender. Remove bone and bay leaves. Add chopped ham and heat through. Add lemon juice just before serving.
