DIRECTIONS

  • In large frying pan over medium high heat, cook bacon; remove with slotted spoon and set aside. Return pan to heat and add onions, carrots and celery. Sauté until tender, but not browned.
  • In large pot over medium heat, combine bacon, sautéed vegetables, ham bone, lentils, pepper, thyme, bay leaves and stock.
  • Simmer for 1 hour or until lentils are tender. Remove bone and bay leaves. Add chopped ham and heat through. Add lemon juice just before serving.
