Gnocchi and Tomato Bake (Oamc)

  • Heat the broiler to high. Heat the oil in a large frying pan then soften the onion and pepper for 5 minutes Stir in the garlic, fry for 1 min, tip in the tomatoes and gnocchi then bring to a simmer.
  • Bubble for 10-15 ins, stirring occasionally until the gnocchi is soft and the sauce has thickend. Season, stir through the basil, then transfer to a large ovenproof dish.
  • Scatter with the mozzarella then broil for 5-6 mins until the cheese is bubbling and golden.

  1. Was not very happy with this recipe. I had to play around with it a lot. I had to use two cans of tomatoes, otherwise it would have been dry. There was virtually no flavor, so I added salt, pepper, and italian seasoning. Also, my family agreed that it would have been better to mix the cheese in with the gnocchi instead of putting it on top, then sprinkling parmesean on top to broil. I give it two stars as a great starter recipe.
     
  2. Can't believe I've forgotten to rate this recipe. I make it often and love it. I often add in some veggies like sliced mushrooms, diced peppers, etc. It's such a delicious, satisfying, budget friendly and healthy meal Thank you!
     
  3. Was a little too watery for my liking. But it was still very yummy and I love that its low in cals and fat.
