Goat Cheese Stuffed Tomatoes

  • Cut tomatoes in half.
  • Spoon out the juice and seeds (leave the pulp).
  • Stuff each half with goat cheese and make sure there is plenty of cheese on top Sprinkle with the dried herbs.
  • Put under the grill for 10 to 15 minutes until the cheese browns.

  3. I LOVED these and I'm a huge fan of goat cheese. My boyfriend who isn't as passionate about goat cheese said he would definitely eat these again. We sprinkled a little bit of breadcrumbs in the middle and then on the top and broiled them for 10 minutes and they came out perfectly. I will definitely make these again! Thank you so much!
     
  4. Thank you for posting this recipe. I used the basic concept for a mother's day dinner while making changes on the stuffing to appeal to a non-goat cheese crowd. I sauteed garlic, sage, and proscuitto briefly on a high heat and then added it to goat cheese in a food processor. I topped them with parmesean and broiled until brown. Everyone said it was to die for. Kudos and thanks for the inspiration!
