Golden, Extra Fluffy Pancakes

"These are my absolute favorite 'plain' pancakes. I love these so much that I can't put anything on them lol... I just eat them dry... I have to be careful.. I like them so much I could eat the whole batch LOLOL .. ok.. maybe not THAT many! hehe"

  • In a small bowl, whisk milk, egg, and oil together.
  • In a larger bowl, combine all dry ingredients.
  • Slowly add liquid mixture to dry mixture and whisk well.
  • Spray large frying pan with cooking spray, and heat to medium heat.
  • Wait until pan gets nice and hot.
  • Make pancakes whatever size you wish-- allowing top to form bubbles before turning over.
  • Cook until both sides are golden brown.
  • These can be frozen and toasted in the toaster to be reheated.
  • They are wonderful reheated!
  • Serve with maple syrup, or whatever you wish to put on your pancakes!

  1. I read the reviews thinking "oh no, i'm going to make another flat batch :(" I did let the mixture sit for half an hour or so before making them into pancakes. This recipe is awesome and they do come out puffy and fluffy for me, similar to a nice big fat soft crumpet! I love this recipe and have always struggled to make pancakes; I am just so terrible at them! This recipe is gooooood! mines come out about a cm thick and that does beat my past attempts... yummy yummy yummy!

Not to sure what some people are complaining about, maybe your baking power is dead, or you have over mixed the batter, if it's to thin thicken it with alittle more flour, mine were thick and fluffy, all i did different is added a little bit of pure vanilla and a handful of blue berries. this is honestly the best scratch pancake recipe i've found to date. once again if you over mix something like this it'll go flat and no fluff to it.... These are AWESOME if you do it right
     
  3. Lovely, fluffy pancakes. I've tried a lot of recipes always looking for that one perfect one and this is at the top. I made two changes. Added 1 teaspoon of vanilla, I just do as like the added flavor and something I haven't done before but wanted to try. Exchanged the milk for club soda, made them even lighter and fluffier Soooo good, will be using this again thanks for posting.

I have tried many pancake recipes on this site and also from many cookbooks. However, this recipe stands above all others I have tried in texture and flavor.   5. Angela...you werent kidding here, these are so good plain and good with your BF idea of the cinnamon and sugar swirl. I added a little almond extract to some and that was super too. These are my pancakes to make from now on, in fact my BF requested a second batch for the freezer! TY

  1. These are fantastic hotcakes! I've also used many other store bought mixes (natural and/or organic of course) and other homemade recipes and this one is the best! It doesn't call for the usual heavy items that other mixes do such as buttermilk, but this recipe is testament that it's not needed! I made very slight modifications to the recipe due to preference and availability; used almond milk instead of dairy milk and I only had 2 tbsp of canola oil remaining so I used 1 tbsp of melted vegan butter to tap it off. My pancakes were very fluffy and so tasty! For those getting a flat cake, I recommend checking your measurements and quality of ingredients because my batter was not incredibly thin and my results were superb! Make sure your dry ingredients are not expired and always store in the fridge if you can. Good luck!
     
  2. Lightest fluffiest pancakes ever!!!! I can only imagine that the people who ended up with flat pancakes using this recipe accidentally used baking soda instead of baking powder. Common mistake that will make this recipe fall flat. Pun intended! :)
     
  3. Good think pancake although I wouldn't call it "extra fluffy". I subbed vanilla soymilk for half the milk which worked nicely. These smelled like funnel cakes as they were cooking up and I couldn't resist throwing in a few mini chips.

Since April 2008, I have been a vegetarian. I dont eat creatures...that's the easiest way to put it! :D I still eat a small amount of dairy, but not very much. I have been missing around here for a while, and hope to poke my head in a bit more often from now on... I hope you enjoy my recipes...
