Golden Potato Surprise

- 4 -5 white medium potatoes, peeled and diced
- 2 tablespoons butter
- 2 red onions, chopped
- 2 tablespoons flour
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 cup half -and-half cream
- 1 teaspoon Dijon mustard
- 1⁄2 cup mayonnaise
- 4 slices bacon, Cooked and crumbled
directions
- Cook potatoes in boiling salt water until tender. Drain and set aside. In saucepan melt butter. Saute onion in butter until soft, stir in flour, thyme, salt and peppr. Gradually add cream, stirringconstantly until sauce thickens. Remove from heat; let cool slightly. Add mustard and mayo, stir until smooth. Place potatoes in 1-1/2qt. Casserole dish. Cover with sauce. Bake @ 350 for 30 minutes. Before serving sprinkle edges of caserole with crumbled bacon.

Yummy recipe for potatoes. I did make some changes, I halved the recipe for just the two of us. I added 3 large diced olives, used green onions, more seasonings and sprinked the top with shedded cheese to the top the last few minutes of baking. This is very tasty and so easy to put together. Loved it, thanks for posting.
