Grandma Jean's Double Chocolate Pie

"A delicious and creamy chocolate pie with chocolate whipped cream topping. Preparation time DOES include stove-top saucepan cooking but does NOT include making the crust."

  • Melt chocolate squares with 2 cups milk in saucepan over medium heat, stirring constantly. Bring to a boil and immediately remove from heat to cool slightly.
  • Combine sugar, flour, cornstarch and salt. Set aside.
  • Beat egg yolks with 1 cup milk. Blend in dry ingredients, mix well. Add the melted chocolate mixture, mix well.
  • Cook over medium heat. Bring to a boil and continue boiling for 3 minutes, stirring constantly. Remove from heat. Add butter and vanilla. Beat again with electric mixture (while still fairly hot).
  • Cool, then pour into pie shell. Cover with plastic wrap and cool overnight.
  • TOPPING: Whip cream until slightly thick. Add remaining 3 ingredients and beat until stiff. Place on top of chocolate pie that has cooled overnight in fridge.
