- 1 egg, slightly beaten
- 1 tablespoon melted lard
- 1⁄4 cup sugar
- 1⁄4 cup molasses
- 1⁄2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup graham flour
- 1 cup white flour
- 1⁄3 cup water
- salt
- raisins (optional)
- walnuts (optional)
directions
- Melt lard and cool slightly.
- Place egg, sugar, molasses and lard in large bowl.
- Stir until well blended.
- Sift together baking powder, baking soda, salt and flours.
- Add to molasses mixture in 3 increments, alternating with water and stirring well after each addition.
- Pour batter into greased loaf pan.
- Bake at 350°F until no longer doughy (approximately 45 minutes to 1 hour).

This was wonderful. It has a delicious, not too sweet taste and was very soft and rich tasting. If you have never had brown bread before, don't expect it to rise up tall and slice neatly - this is more of a tearing bread (I consider brown bread to be in the same family as soda bread and beer bread) and sits very low in the pan. It is dense and chewy - just as it is supposed to be. This would be a great accompaniment to a hot bowl of oatmeal on a cold winter day - drizzled with butter and syrup, yum! Thanks for a great recipe!
